tasty garlic mushrooms
 

Ingredients - for 4 people

  • 400 gr mushrooms - thickly sliced if large; left whole if small
  • 4 cloves garlic - peeled and sliced
  • 1 red hot chilli pepper - chopped (optional)
  • 1 tablespoon freshly-chopped parsley
  • Olive oil
  • Salt and black pepper

Method

  • Slice two of the garlic cloves.
  • Heat a little oil in a pan.
  • Tip in sliced garlic cloves along with chopped chilli.
  • Cook for a minute, then mix in mushrooms and sauté.
  • Crush remaining garlic cloves with a little salt.
  • Mix in parsley, plus sufficient oil to form a paste.
  • Stir the mixture in with the mushrooms.
  • Cook a further 2-3 minutes.
  • Sprinkle with black pepper and serve.

low-calory garlic prawns
 

Ingredients - for 4 people

  • 400 gr prawns - shelled
  • 6 cloves garlic - peeled and sliced
  • 1 red hot chilli pepper - finely chopped
  • Olive oil
  • Seasoning
  • 1 tablespoon freshly-chopped parsley
  • 1 lemon - quartered

Method

  • Heat a little oil in pan and add garlic slices.
  • When just starting to color, add the chilli pepper.
  • Cook for 2 minutes, then increase the heat.
  • Mix in the prawns, then sauté 1-2 minutes each side.
  • Season, and sprinkle with the chopped parsley.
  • Serve, accompanied by lemon wedges.

Ingredients - for 4 people

  • 2 medium potatoes - peeled and diced 1cm square, or thickly sliced
  • 6 eggs - lightly beaten
  • 1 onion - peeled and chopped
  • 1 clove garlic - peeled and crushed with salt
  • Olive oil
  • Seasoning

Method

  • Heat oil in pan, add onion and garlic and soften.
  • Introduce potato and sauté.
  • Lower heat, cover pan, cook until potatoes are tender.
  • Tip potato mixture in with beaten eggs.
  • Transfer to another pan with clean oil.
  • Cook over low heat 10-15 minutes until mixture is just set.
  • Brown upper-side under hot grill.
  • Leave to cool, then carefully turn out.
  • Serve in triangles or bite-sized squares.

Ingredients - for 4 people

  • 1 chicken - chopped into smallish pieces
  • Half head of garlic - peeled and crushed with salt
  • 1 cup of water
  • Juice and zest of 1 lemon
  • 3 strands of saffron - crumbled
  • Olive oil
  • Seasoning

Method

  • Heat oil in pan.
  • Add chicken pieces and saut� until golden-brown.
  • Season and place in large, shallow casserole.
  • Saut� crushed garlic in pan.
  • Stir in water, zest of lemon and saffron.
  • Bring to the boil and simmer 3 minutes.
  • Remove from heat and mix in lemon juice.
  • Pour over chicken.
  • Bake at 170C for 45 minutes - or chicken tender.

Ingredients - for 4 people

  • 4 cups rice
  • 8 cups fish stock
  • 8 king-sized prawns/langoustines
  • 8 mussels
  • 200 gr shrimps
  • 200 gr peas (fresh or frozen)
  • 2 ripe tomatoes - skinned and chopped
  • 2 cloves garlic - thinly sliced
  • 3 strands saffron - crumbled
  • Olive oil
  • Seasoning

Method

  • Heat oil in pan and saut� garlic.
  • Add tomatoes, peas, shrimps and saffron.
  • Cook for a few minutes.
  • Add rice, stir well, cook 2 minutes, then add stock.
  • Simmer for about 20 minutes.
  • Decorate with seafood a few minutes before rice is cooked.
  • Cover paella with lid to poach seafood.
  • Stand for 5 minutes before serving.
